Peel pizza is a traditional recipe of central Italy which first became the most popular dish in Rome pizza parlours and then all over Italy. The Scuola Italiana Pizzaioli not only proposes it as a dish in its own right, but also in a version as an aperitif and tasty snak for pubs and beer parlours.
